Beef and Red Pepper Burgers
Dartmoor Farmers - Beef Burger with Red PeppersServes 4

Preparation time: 15 minutes plus chilling

Cooking time: 8-12 minutes

Ingredients:

  • 450g/1lb lean minced beef
  • 1 small onion, peeled and finely grated
  • 1 clove garlic, peeled and crushed
  • 1 small red pepper, deseeded and finely diced
  • 1.25ml/½tsp dried mixed herbs
  • 30ml/2tbsp barbecue or sweet chilli sauce
  • 25-50g/1-2oz fresh breadcrumbs
  • Salt and freshly milled black pepper
  • 1 egg, beaten
  • 15ml/1tbsp sunflower or vegetable oil
  • Salad leaves, to garnish

Teriyaki Skewers
Dartmoor Farmers Teriyaki SkewersMakes: 12-14 skewers

Preparation time: 5 minutes

Cooking time:

  • Rare: 2½ minutes on each side
  • Medium: 4 minutes on each side
  • Well done: 6 minutes on each side


Ingredients:

  • 450g/1lb sirloin or rump steak, cut into thick, long strips

For the marinade

  • 60ml/4tbsp light soy sauce
  • 5ml/1tbsp sesame oil
  • 15ml/1tbsp orange juice
  • 1 x 2.5cm/1inch piece fresh root ginger, peeled and grated
  • 2 garlic cloves, peeled and crushed

Dipping Sauce

  • 100ml/3½floz. prepared plum or sweet chilli sauce

To garnish

  • 10ml/2tsp sesame seeds
    2 spring onions, finely chopped

Lamb, Rosemary and Apple Burgers with Apple and Cider Relish
Dartmoor Farmers - Lamb, Rosemary and Apple BurgersServes 4

Preparation time: 15 minutes plus chilling time

Cooking time: 12-16 minutes (burgers), 20-25 minutes (chutney)

Ingredients:

 

  • 450g/1lb lean lamb mince
  • 1 garlic clove, peeled and finely chopped
  • 30ml/2tbsp freshly chopped rosemary
  • 1 medium cooking apple, peeled, cored and coarsely grated
  • Salt and freshly milled black pepper
  • Apple and Cider Relish:
  • 2 dessert apples, cored and finely chopped
  • 225g/8oz cherry tomatoes, halved
  • 1 small red onion, peeled and finely sliced
  • 2 sprigs fresh thyme
  • 50g/2oz sugar
  • 30ml/2tbsp balsamic vinegar
  • 150ml/¼pint cider

Lamb, Mint and Halloumi Kebabs
Dartmoor Farmers - Lamb, Mint and Halloumi KebabsServes 4


Preparation time: 10-15 minutes plus marinating time

Cooking time: 12-16 minutes


Ingredients:

  • 450g/1lb lean boneless lamb leg or shoulder, cut into 2.5cm/1inch cubes
  • 30ml/2tbsp freshly chopped mint or oregano
  • Salt and freshly milled black pepper
  • 15ml/1tbsp freshly squeezed lemon juice
  • 15ml/1tbsp olive oil
  • 100g/4oz halloumi cheese, cut into small cubes

Barbequed Lance Steak
Serves: 4
Preparation time: 5 minutes plus marinating time
*Cooking time: (Based on a 2cm/¾inch thick steak):
  • Rare: 2½ minutes on each side
  • Medium: 4 minutes on each side
  • Well done: 6 minutes on each side

Ingredients:

  • 2 x 300g/10½oz lean rump steaks, each cut in half
  • 5ml/1tsp sunflower oil

For the Marinade:

  • 15ml /1tbsp Worcestershire sauce
  • 15-30ml/1-2tbsp prepared barbecue sauce
  • 10ml/2tsp good balsamic vinegar
  • Salt and freshly milled black pepper
  • Rocket leaves, to garnish
